Rant: These weird birds keep digging up my mulch... what gives?

I've been noticing these brown birds with streaky chests in my backyard every morning. They keep digging up the fresh mulch in my flower beds... it's driving me nuts because I just redid them. I'm pretty sure they're after insects, but I can't identify the exact species. Should I just leave them be or is there a way to gently discourage the digging?

Lol, those birds are basically running a free excavation service in your yard. If it's cocoa bean mulch, they might be digging for chocolate covered worms. You've got yourself some very committed amateur archaeologists. They're probably billing you for pest control you didn't ask for. Maybe put up a tiny no digging sign and see if they respect it.
