Appreciation post: I just cooked my 500th brisket and the feeling is weird
On one hand, hitting that number feels like a real mark of time and work, you know? But on the other, it makes me wonder if I'm just stuck in a loop or actually getting better. I mean, the one that put me over was a 16-pounder in my offset last weekend. Has anyone else hit a big number that made you stop and think?

Five hundred is a huge deal, congrats. I hit a hundred on my kettle last year and it gave me the same weird pause. You must have learned a ton just through that much repetition, even if it feels routine sometimes. That 16-pounder sounds like a solid way to cross the line.

It's funny how big numbers can sneak up on you. You do something every day, like making coffee or walking the dog, and one day you realize you've done it thousands of times without even marking it. The routine itself becomes the proof of what you've learned, even when it feels boring. Hitting five hundred of anything is just a quiet receipt for all that time you put in.
