Finally caved on the snake method for ribs after a competition cook showed me his temps

Watched a guy at the Memphis in May contest run consistent 225 for 8 hours straight on a Weber. His firebox was barely bigger than mine. Never used snake coils before because I thought it was just internet hype. But after seeing his thermopen readouts, I tried it last weekend and my racks came out way more even.

I mean the snake method is honestly the only way I'll do ribs now on my kettle, it fixed that weird hot spot I always got near the coals. Definitely worth trying if you haven't already, the evenness is night and day.

My first snake attempt I built it too tall and ended up with a mini volcano that nearly launched a rib into the neighbor's yard. Live and learn.
