Frustrated with how BBQ shows edit out the real wait times

I've seen a trend in BBQ shows where they cut out the long wait times. It bugs me because it gives the wrong idea about pitmasters. I found out when I tried to copy a TV recipe. My brisket was dry since I rushed it. These shows need to show how much time real BBQ takes.

Some chefs on podcasts say that editing totally ruins the learning process for home cooks.

Seriously, it makes everything look so easy when you don't see the real-time mess ups. That totally sets you up to feel like a failure when your first try isn't perfect.
