Got into an argument with a guy at the HEB parking lot in San Antonio about wrapping brisket at the stall
Last Saturday I was loading my offset into the truck after grabbing oak splits and this older guy starts telling me foil crutch is cheating and real pitmasters ride the stall out naked. I tried explaining that at 165 internal I wrap in butcher paper to push through in 2 hours instead of 5, and he just shook his head and walked off. Am I crazy for thinking there's no one right way to run a cook, or does the paper vs foil thing actually matter that much?
