Had to choose between a full packer brisket or just the flat for a 20-person family reunion. Went with the full packer and it was a gamble.

Oh man, that's a tough call. I've been there, staring at that giant packer in the cooler. The flat alone feels safer, but you just know that point has all the good flavor. Hope it turned out tender for everyone.

Totally get what you mean about the point having all the good flavor, @martinez.kim. That fat just melts and makes everything so rich. I went for the flat last time because I was scared of messing up the point, but my brisket was a bit dry. Next time I'm going for the whole packer, even if it takes up the whole smoker. The risk seems worth it for those perfect, juicy bites.
