Hit 100 briskets this weekend and finally nailed the stall timing
I smoked my 100th brisket last Saturday for a big family cookout in Austin. Started keeping count after my first one came out like shoe leather back in 2022. The stall hit at 157 degrees this time and wrapping in butcher paper got me through it in under 2 hours. Has anyone else tracked their brisket count and noticed a big improvement after a certain number?

Can't say I've been keeping a numbered list of my briskets, that feels like I'd need a hobby on top of my hobby. But hey, if counting keeps you motivated, go for it.

Right, counting would totally kill the fun for me too, I just go by feel every time.
