Hot take: Aaron Franklin's brisket method is NOT the only way to do it right
I was down in Lockhart last month and tried this old guy's brisket who just rubs with salt and pepper, smokes it unwrapped the whole time, no spritzing. Turned out amazing with way better bark than anything I've ever pulled from a wrapped Franklin-style cook. Who else has had a 'non-traditional' BBQ that beat the big names?

Dude yes, that unwrapped method is where it's at for that crunchy bark. Tried it myself last summer on a drum smoker and it was the best brisket I've ever made, totally different texture than the wrap crowd says you have to do.
