I finally visited Franklin Barbecue in Austin and I don't get the hype

I drove 4 hours last Saturday and waited in line for 3 hours, but the brisket was just okay - way too much pepper and not enough smoke flavor for my taste. Anyone else think their hype is mostly about the line itself and not the actual meat?

Man, I gotta say I felt the exact same way when I finally went. That wait time is just insane for what you get. The peppercrust was so thick it felt like eating a steak covered in gravel, barely any smoke coming through. People treat it like a religious experience but I think it's more about bragging rights than the actual food. There's a dozen places in Texas with brisket as good or better without burning half a Saturday.

And you're telling me the brisket was that bad @barbarah19? Because if it's just a texture thing with the crust, I'd still give it a shot if the smoke flavor was there. But if the meat's dry or the bark's like chewing on gravel, that's a whole different problem. So was it dry too, or was it just the peppercrust that ruined it for you?
