My uncle in Amarillo told me to wrap my brisket in foil at 165 and I almost didn't listen
I was 4 cooks into learning my offset smoker and my flats kept coming out dry and gray, so my uncle, who ran a barbecue stand in Amarillo for 11 years, told me to stop fighting it and wrap in foil once the bark set. I ignored him for two more cooks because I wanted that hard bark everyone talks about, and both times the point was fine but the flat was like cardboard. Finally tried his way on a 14 pound packer last weekend and the flat was juicy for the first time, so now I'm wondering if foil is really cheating or if I was just being stubborn.
