PSA: Don't waste $85 on that fancy thermopen clone for your offset smoker

Bought a $85 wireless thermometer set off Amazon in April, it read 35 degrees hot on a brisket at my buddy's place in Austin, cooked a $60 prime packer to shoe leather before I caught it, anyone else trust cheaper probes over the pricey ones and get burned?

Those cheap probe sets are honestly fine for 90% of what most people do. The big names charge you for the brand and the fancy app, not for accuracy. I've got a twenty dollar dual probe from a hardware store that's been within a couple degrees of my ThermoPro every time I've checked them side by side. The real trick is to test any new thermometer in boiling water and ice water before you trust it with expensive meat, no matter what you paid for it.
