Serious question, did anyone else drop $200 on a Thermapen and feel silly until it saved a brisket?
I grabbed a Thermapen Mk4 for about $200 after my old $15 dial thermometer lied to me on a pork butt and I served dry meat at a family cookout in June. I felt dumb spending that much on a thermometer until last Saturday when it caught my brisket point at 212 in one spot while the flat was still sitting at 190. Ended up pulling it early and slicing the best brisket I've made in two years, versus the shoe leather I would have gotten. Curious if anyone here still trusts cheap probes or if you all just poke and pray like I used to?
