Honestly, I thought spending $600 on a shiny offset smoker would make me a pitmaster overnight. Nope. That thing burned through charcoal like crazy and I couldn't keep the temp steady to save my life. After three failed briskets, a buddy told me to go back to basics with a used Weber kettle I got for $40 on Craigslist. Turns out, learning on a simple setup taught me way more about fire management and airflow than that expensive offset ever did. I burned through my budget but saved my BBQ game. Has anyone else regretted a big purchase and found a cheaper way to learn?

Is it really that big of a deal though? I mean, you learned a lesson about fire management, that's a win in my book. A $600 smoker sounds like a pain but at least you didn't let it collect dust in the garage forever.
