Update: Tried the foil boat method on a pork butt last month in my Oklahoma Joe's
I was getting tired of my bark getting soggy when I wrapped, so I gave the foil boat a shot during a 14-hour cook. The pork was still super tender, but the top stayed nice and crunchy. Anyone have a good trick for keeping the bottom from drying out when you do this?

Yeah, I put a little water pan underneath the grate to add some steam. Helps a ton.

Wait, you put the water pan under the grate? I always put mine right on the coals next to the meat. No wonder @ellis.leo's friend got such good results, that makes way more sense for actual steam. I've been doing it wrong this whole time.
