Vent: Dry rub sugar habit broken by a pitmaster's tip
I always put sugar in my dry rubs for bark. A pitmaster used just salt and pepper, and the taste was much cleaner. Now I skip the sugar every time.

Actually, the reason salt and pepper work so well is they don't add their own flavor, they just wake up what's already there. A lot of other spices just cover up the taste of the food itself.

Admit, @ericj45 is totally right about salt and pepper being the classic move. Honestly, it's the basic pair that works on literally everything. Tbh, I watch people use fancy garlic powder or smoked paprika and act like they invented cooking. But ngl, all those extra seasonings can sometimes mess up a good thing. Salt and pepper just enhance the food without trying too hard. So yeah, call me boring, but that combo will always be the best.
