Watched a backyard cook at a gas station lot change my whole rub game
Stopped for gas last Saturday outside Austin, and this dude was running a smoker off his truck tailgate. He threw some pork butt on with nothing but salt and pepper. I asked him about it and he said "you don't need 17 ingredients to make meat taste like meat." Tried it myself on Sunday. Best pulled pork I've ever made. Anyone else ditch the fancy rubs and go simple?

That "you don't need 17 ingredients" line hit home - switched to just salt and pepper on my ribs last month and never looked back.

Is it really that serious though? Salt and pepper works fine, but I'm not sure it's worth declaring war on garlic powder.

Had a buddy who spent hours mixing up some fancy dry rub for years. Tried it salt and pepper only once, and now he won't touch that other stuff. Smoked meat just tastes better when you let the pork do the talking.
