Why does everyone hype up offset smokers when pellet grills are more consistent?

I ran a side by side test last weekend with a friend's offset and my Traeger, cooking 4 racks of ribs on each. The offset needed constant babysitting every 15 minutes to stay at 225, while the pellet grill held steady with zero effort. Am I missing something about the flavor trade off?

Ngl, I used to think that same way until I actually blind taste tested some friends. Honestly, the pellet grill ribs held their own against the offset ones. The offset had a slightly deeper smoke ring, but the pellet meat was juicier and the smoke flavor was still there just more subtle. Tbh, a lot of that "offset is the only way" talk comes from people who haven't tried a good pellet smoker with quality pellets like Lumberjack or Bear Mountain. The difference in flavor is way smaller than people claim, especially when you use a smoke tube for extra kick.

Yeah, pellet grills just cant touch that offset smoke flavor though.
