Chicken skin slipping off during debone? Try freezing it 20 minutes first

I kept tearing skins every single shift until a guy from the Lancaster shop told me to pop the birds in the freezer for 20 minutes before starting. Has anyone else tried this or got a better trick for keeping the skin intact?

Freezer trick works, but cold hands are the real problem.
