Got a stubborn pork shoulder to break down in half the time
Had a whole case of them come in from the supplier with way more connective tissue than usual, and my usual method was taking forever. On a whim, I tried scoring the silver skin in a crosshatch pattern before popping the joint, and it came apart clean in about 15 minutes. Anyone else have a faster way to handle tough silverskin on big cuts?

Scoring the silver skin is a solid move. I’ve had luck with a really sharp, thin boning knife and just working the tip under the membrane to lift it up before peeling. Keeping the blade almost flat against the meat helps avoid cutting into the good stuff. A little patience at the start saves a ton of time later.

Totally see that same idea in fixing stuff around the house. Like when a drawer gets stuck, you can force it and break the slide, or take a second to feel where it's catching and gently wiggle it free. Rushing the repair usually makes it worse, but a careful start gets it done right. It's all about that first careful move setting up the whole win.

That tip about keeping the blade flat is key. I go a step further and chill the meat for twenty minutes first. It firms up that silverskin just enough so the knife slides under it easier without grabbing the muscle.
