Had a lamb shoulder fall apart on me during a demo at a farmers market in Asheville

I was doing a whole animal breakdown at the tailgate market about 2 months ago. Sheep was hanging fine, but I forgot to tighten the gambrel before I started pulling on the back leg. The whole thing just slid off the hook onto the concrete. Dust and mud all over the meat. Had to write off about 80 bucks worth of product on the spot. The crowd went dead quiet. Did my best to make a joke out of it but man did that hurt. Anyone else ever had a carcass hit the floor in front of customers?

Oh man, I once dropped a whole smoked brisket off the smoker grate right in the dirt.

Is that really a write-off though? I mean, you lost the meat but you gained a story that people will remember way longer than a perfect demo. Those moments show customers you're human and your process is real, not some sterile TV show.
