Had to pick between keeping the prime rib whole or cutting it into steaks for a big order last Friday

I went with cutting it since the customer wanted individual portions, but I still second-guess if they would have liked the full roast better for presentation, has anyone else dealt with that split decision on a tight deadline?

oh for SURE, I've been there. it's like you're trying to read their mind across the phone and you just have to guess. i had a big catering order last month and i was agonizing over the same thing, kept the roast whole and then the guest was like "actually can you slice it thin?" i was SO annoyed. honestly, you went with your gut and that's what matters, the customer said individual portions so you gave them exactly what they asked for. sometimes we overthink these things way too much, the food was hot and ready on time and that's the real win.

I READ somewhere that most catering mix ups come from customers not knowing how to describe what they want, so it's really on THEM half the time. you got it there on time and hot, that's a win in my book.

emma_dixon said it right, hot food and on time is what really counts. If they wanted a whole roast they would have asked for it, you made the call that fit their words and the deadline.
