Heard a guy at the market say he only sharpens his boning knife once a year
I think that's a great way to work harder, not smarter, and it probably tears up the meat. How often do you all actually run a steel over your main blade during a normal shift?

You sharpen a boning knife only once a year? Honestly, I give mine a few passes on the steel before I even start breaking anything down.

Yeah, once a year... if I remember. Mine's basically a butter knife by July. I tried the steel thing once, but I spent more time trying to remember which end was the handle. Ended up just sawing through a chicken thigh like it was a tree branch.
