I used to think those expensive boning knives were a waste...
For like 5 years I used the same $20 Victorinox fibrox knife for everything. Trimming, deboning, breaking down primals, all of it. I figured a knife is a knife as long as it's sharp. Then this old timer at the shop let me try his Shun boning knife during a rush on a Friday. The difference in control was wild. I could feel the bones through the blade instead of just guessing. After 3 months of saving I finally got one. Now I can't go back. Has anyone else had one tool that just changed how you work for the better?

wait wait you could feel the bones through the blade?? that's insane, i didn't even know that was a thing lmao. i've been using the same cheapo knife for years and now i'm genuinely shook
