I used to trim briskets with a standard boning knife, but after watching a demo in Kansas City, I switched to a 6-inch curved cimeter for way more control.

What's your go-to knife for breaking down a primal, and did you have a moment that made you switch?

Totally get that, I switched to a 7-inch breaking knife for ribs after a class in Memphis. It just glides through the joints so much easier. I see what @kellyjones means about the boning knife, but for me the extra length changed everything!

A boning knife still works best for me. Never saw the need to switch.

My grandpa used a boning knife too, @kellyjones, and he was stubborn as a mule.
