I was sharpening my boning knife wrong for a solid year

I kept getting these tiny burrs that would tear at the meat instead of slicing clean. It finally clicked when I was helping out at my cousin's shop in Boise last month. He watched me for two minutes, then said, 'You're using too much pressure on the pull stroke, it's rolling the edge.' I switched to lighter, even strokes and the difference was night and day. Anyone else have a basic technique they were messing up for way too long?

Totally get that. It's wild how often we brute force through a problem instead of checking the basics. I see it all the time with people trying to open jars or untangle cords, just using more muscle when a lighter touch is the real fix.

@joel_hall17 My dad still tries to open every stuck door with a shoulder charge.

Honestly, how many doors has he messed up doing that? Tbh my uncle broke a door frame trying the shoulder charge on a bathroom door that was just locked. @joel_hall17 is right about checking basics, like seeing if it's actually latched or just swollen from humidity. A little push with your hip works better, or even just lifting the door up while you turn the handle. Forcing it usually just breaks the trim or your shoulder.
