Just learned that a single cow can produce over 400 pounds of hanger steak in a year, blew my mind
I was reading a USDA breakdown online last night while waiting for a pork belly to cure. Turns out that cut we always fight over in the shop, the hanger, makes up less than 1% of a carcass. But a big steer can still yield around 400 pounds of it over a year if you count all the animals processed. I never thought about it that way before. Anyone else ever look up actual yield numbers and get surprised?

Hanger steak fights are serious business, @carter.casey and I would definitely lose that argument too.

Yeah I'd probably lose a fight over steak too, honestly I'm a pushover when it comes to food.

A buddy of mine who works at a butcher shop told me they once got a whole steer and only pulled like three hanger steaks off it total. He said the whole staff argued over who got to take one home.
