You mentioned curved breaking knife... I've got one that's been sitting in my drawer for years cause I can't get the hang of the angle.

Oh boy, that's actually a breaking knife, not a breaking knife - common mix-up though. The curved ones are meant for trimming and skinning, not the heavy breaking cuts you'd do with a straight blade.
