Talked to a retired butcher about pricing, made me rethink my whole list

Had a long chat with an old timer down at the farmer's market on Saturday, he said I was leaving money on the table by not charging for my custom cuts... he showed me his price sheet from 1982, same trim work was 3x what I charge now. Has anyone else bumped their prices lately after comparing notes with someone older in the trade?

Ha! I bet that butcher's price sheet is older than my truck's last engine, I'm probably undercharging too!
