This older guy at the farmer's market in Springfield told me my pork shoulder trim was 'just right'

Tbh, I was just doing my usual setup last Saturday when this guy, Frank, stopped and watched me for a minute. He said he used to run a shop in the 80s and that seeing someone take the time to get all the silver skin off the shoulder before cubing it was a good sign. Honestly, it was just a quick comment, but it stuck with me all week. Anyone else get a small compliment from an old timer that made your day?

Totally get what you mean, @adamp31. It's like when you finish a deep clean on a really old oven and the homeowner just gives you that quiet look. They don't say much, but you can tell they see all the work you put in. That silent respect from someone who knows the grind is the best pay there is, lol.
