Took me 11 tries to get lamb shoulder nets right

Been cutting for 8 years and lamb shoulder nets always kicked my butt. Last week I finally cracked it, the key was trimming the fat cap cold and using a shorter blade for the final pass. Took me 11 attempts across three days before one came out clean enough to sell without rework. Anyone else struggle with this cut or is it just me?

Eleven tries sounds about right honestly. I always thought it was just about having a sharp knife and steady hands, but you're making me realize the whole prep part matters way more than I gave it credit for. Cold fat cap is a game changer I never considered.
