Warning: That $200 boning knife set from the fancy catalog wasn't worth it
Bought a 6-piece set with all the bells and whistles last fall for $200, thinking it'd make breaking down primals easier. After 3 months, two blades chipped and the handles started slipping in my grip. Anyone else find that one solid chef's knife beats a whole set every time?

See it all the time in this sub and everywhere else really. People think buying the whole package is gonna solve their problems when really you just need one or two things done right. My buddy spent a fortune on a fancy tool set for his truck and still borrows my old Craftsman wrench because it actually fits. Same with camping gear, saw a guy show up with a brand new tent that had a zillion features and the zipper broke the first night while my plain old coleman was fine. We get sold on the idea of more stuff but reality always shows us that one good piece beats ten mediocre ones.

My buddy bought a similar set from that same catalog and I actually made fun of him for sticking with his old Wusthof instead. For years I thought a big knife set was the holy grail of kitchen gear. But then I started noticing how I only ever grab my 8-inch chef's knife for breaking down chickens or trimming silverskin, while the damn steak knives in the set just sit there taking up drawer space. That $80 chef's knife has held its edge way better than the fancy ones from the set my neighbor bought. I still think having a couple good knives is smart, but this post finally got me to stop dreaming about those big sets.

Same boat here. Dropped way too much on a "pro" set a couple years back and now half of them are just taking up space. My beat up old Victorinox does more work than all of them combined.
