Had a friend tell me my sourdough starter was too acidic and she was right
I've been making sourdough for about 2 years and always wondered why my loaves tasted a bit off. Then my buddy who bakes at a bakery in Portland tried a slice and said my starter had too much hooch on top, I was feeding it wrong. I started discarding more and feeding it every 12 hours instead of 24, and the difference was night and day. Has anyone else gotten super specific feedback that totally changed their baking game?

Honestly is it really that serious though sourdough is bread not brain surgery.

Totally. I used to only feed my starter once a day and it always smelled like nail polish remover. Switching to twice a day with a bigger discard finally got it to that nice fruity tang instead.
