Figured out why my bread kept coming out dense after 2 years of the same recipe
I have been baking the same sandwich loaf since 2023 and it always came out like a brick, so I just assumed my oven ran cold and kept bumping the temp up. Last Saturday my neighbor Carol came over while I was kneading and asked why I was adding the last cup of flour all at once instead of a spoonful at a time. Turns out I was dumping in way too much and never letting the dough tell me when to stop. The loaf I made Sunday actually rose over the pan rim for the first time, and I just stood there staring at it like an idiot. Does anyone else have a baking habit they only caught because someone happened to walk by?
The line about the dough telling you when to stop really hit home. I feel like half of life is just noticing what's right in front of you instead of forcing your plan onto it. My dad gardened for years and always overwatered because he never checked the soil, he just followed the schedule in his head. A neighbor pointed it out once and it changed everything for him. We get so locked into the routine that we stop paying attention to what the thing is actually doing, whether it's bread or tomatoes or anything else.
