Finally tried the $15 bag of coffee from the local roaster instead of the $8 store brand

The cheap stuff always tasted bitter no matter how I brewed it. Third cup of the local roast this morning and I didn't even need sugar. Am I just paying for marketing or is there really that big a difference in beans?

Nah, the marketing is real but so is the difference. Fresh beans from a local roaster haven't been sitting in a warehouse for months like the store stuff. The oil on those fresh beans actually stays good and gives you flavor instead of turning rancid. You'll taste it even more if you ever try a light roast vs the dark store brand that's basically burnt to cover up the staleness lol. The price jump is big but you're not just paying for a fancy bag, you're paying for something that wasn't roasted last year.

Oh man, you hit on something real there. In my experience, fresh beans from a local roaster are usually on a completely different level - the oils and flavors haven't had time to go stale and flat like the store stuff that's been sitting on a shelf for months.

My first sip of local roast I actually checked if my taste buds were broken lol but @ryantorres nailed it - the cheap stuff burns off all the good oils to cover up that warehouse dust taste.
