Left my sauerkraut jar in the back of the fridge by accident

Found it six months later and it was the best batch yet. Sometimes forgetting about it is the secret.

Isn't it funny how some foods just get better with time? I had a jar of homemade pickles that sat forgotten for almost a year, and they were perfectly crisp. @emery_black, your point about the cold pausing things rings true, since my fridge must have been just cold enough to keep them safe. Honestly, neglect seems to be the key for a lot of fermented stuff, as long as it's sealed up tight.

Six months in the back of the fridge? That's wild. My brain would just assume it turned into a science project by month two. Guess the cold really put everything on pause. You got lucky it didn't grow a fuzzy sweater. Maybe the secret ingredient is actually just forgetting about it forever.
