Question about the kombucha bar in Austin

I checked out that new kombucha spot on 6th Street and they only serve it on tap, no bottles. On one hand, it's super fresh and cuts down on waste. On the other, you can't take any home. What's the better move for a fermentation spot?

Honestly, who even wants a bottle after trying it that fresh? My bigger worry is the vibe. A place like that lives or dies by becoming a hangout, not just a store. If you can't grab a bottle and go, will people stick around long enough to make it feel like a real spot, or just treat it like a weird soda fountain?

You're right about the vibe being the bigger worry, harper_foster. The trick is to make the space itself worth staying in, with good seating and maybe some simple snacks. If it's just a counter, people will absolutely treat it like a weird soda fountain and leave.

Saw a piece in the Austin Chronicle about tap-only spots cutting their plastic use by like 80%. Harper_foster has a point about needing a reason to stay, but maybe that's the whole idea?
